Pizza bagels
6 Cups flour
2 Cups water
2 Tbsp: sugar
2 Tbsp: active dry yeast
2 Tbsp: salt
1. Combine all of the above in a large mixing bowl, adding flour last.
2. Using: a dough hook mix on medium speed, until dough is smooth and not sticky.
3. Using: the same bowl, grease and place dough in the bowl, cover and let rise, about 45 to 60 minutes.
4. you will need wax paper cut into about 4x4 squares
5. depending on the size you want, divide dough equally. I get around 15
6. Form balls and flatten. I use a plate. Find something that is smaller than your flattened bagel, something like a spice jar. Take the bottom of the spice jar and make an indentation in the middle of the bagel. Pressing: hard.
7. place bagel on wax paper square put on cookie sheet. You can fit about 8 bagels per cookie sheet.
8. turn on the oven for about a minute, place cookie sheets in the oven. Let rise until doubled, about 45 minutes.
9. In a large pot, add 1 Tbsp: salt and 1 Tbsp: sugar. Fill with water and bring to a boil. After it comes to a boil, turn down to medium high.
10. Depending on the size of your pot, lift out bagels touching wax paper only. Place in pot and remove wax paper. Do not crowd, or stick to sides.
Let cook for 1 minute and 45 seconds on each side.
11. Let drain on towels, not paper towels they will stick.
1 to 1 1/2 jars pizza sauce.
About 3 Oz: finely graded cheese.
About 3 Oz: chopped pepperoni.
Pre heat oven to 375
1. If you don’t like cleaning cooked on food, I suggest you line the cookie sheets with parchment paper.
2. 2. place pizza sauce in a bowl. Dip bagels, coating all sides. Place on cookie sheet, it doesn’t madder if they touch.
3. 3. sprinkle cheese and pepperoni over the bagels.
4. 4. Place in oven and cook for 20 minutes.
5. 5. Remove from cookie sheet put on cooling racks.
